This refreshing salad makes a lovely light lunch in summer when fresh peaches are readily available.
Place oil in medium sauté pan and heat over medium heat. Place ham into hot oil and cook until crispy, stirring occasionally. Drain on paper towel to remove excess oil and reserve until salad is tossed in dressing. Remove oil from pan and reserve until cool. Replace pan on stove over medium heat and warm sliced peaches. As peaches are heating, place oil in bowl and add in vinegar, salt, and pepper and whisk together until emulsified. Place washed and dried greens in salad bowl and slowly add dressing, tossing until mixed greens are lightly coated. Add in peaches and crispy ham and toss again lightly. Taste and adjust seasoning. Place salad on plate and garnish with sliced onions and goat cheese crumbles.
Note: you may not require all of the vinaigrette to coat the greens
