Bright springtime asparagus comes together with ham to create a perfect light lunch in this delicious quiche. Serve with a side salad of mixed greens.
Preheat oven to 325˚F. Place prepared pie crust in pie pan, carefully pressing into side of pan. Trim off excess crust. Sprinkle asparagus, ham, shallots, and peppers into crust. Sprinkle cheese on top. In a medium-sized bowl, whisk together eggs, half and half, buttermilk, salt, pepper, and nutmeg. Carefully pour mixture on top of ham and vegetable mix. Bake for approximately 45 minutes, or until egg mixture is set. Remove from oven and allow to cool to room temperature before serving.
