Quinoa is a protein-rich grain with a mild flavor, a perfect match for flavorful ham and vegetables.
In a small pot with a lid, combine quinoa, salt, crushed garlic, fresh rosemary, water, and chicken stock. Bring to boil and stir frequently. Lower heat to simmer and cover for 20 minutes, stirring occasionally. Use your fork to fluff up. Adjust seasoning to taste and keep warm until required.
Heat olive oil in a sauté pan on medium heat. Add shallots and ham. Sauté, stirring frequently, until lightly browned. Add snap peas and carrots to pan and stir, heating until vegetables are just warmed. Stir contents of pan and quinoa into large serving bowl, sprinkle with lemon juice. Add salt and pepper to taste.
