This boldly-flavored salad is quick option for busy evenings.
Place vegetable oil in small sauté pan on medium heat. Heat oil for 2 minutes; add ginger and garlic remove from heat immediately. Note: Do not brown. Place all heated ingredients into medium- large mixing bowl, whisk in vinegar, sesame oil, soy sauce, scallions, and chili flakes. Stir until mixed well. Add in warmed rice, ham, edamame, radishes, carrots, and sesame seeds. Mix until all ingredients are combined.
Adjust seasoning to taste, place lettuce cups on plate and fill with salad. Garnish with peanuts.
